2 cans (13.5 oz) coconut milk
1 cup coconut cream
2 cups water – plus more as needed
- Combine coconut milk, coconut cream, and 2 cups water in a large pot over medium heat.
- Bring to a gentle boil, stirring occasionally.
Step 2: 🧅 Introduce the Aromatics
2 large sweet onions (Maui or Vidalia) – sliced very thin
1 tbsp fresh ginger – slivered
¼ tsp white pepper
- While broth comes to boil, slice your onions and ginger thin.
- Add onions, ginger, and white pepper to the simmering broth.
- Simmer 10–15 minutes, until onions soften and aromas deepen.
Step 3: 🐟 Cook the Fish
3 lbs firm-fleshed fish – cut into large portions (tuna ideal)
- Lower the heat slightly and add the fish pieces to the pot.
- Simmer gently 5–8 minutes until just cooked through.
- Avoid boiling vigorously to preserve tenderness.
Step 4: 🧂 Adjust & Season
Additional water – as needed
Salt – to taste
- Assess the broth consistency and add water gradually to reach your preferred level.
- Season with salt to taste.
- The broth should be medium-bodied to lightly brothy.
Step 5: 🌿 Finish
5 scallions – thinly sliced
Optional: fresh hot pepper, sliced
- Stir most of the sliced scallions into the pot gently to avoid breaking the fish.
- Reserve some scallions for garnish.
- Add fresh hot pepper if you prefer a spicier broth.
Step 6: 🍚 Serve

Rice – excellent for soaking broth
Steamed cabbage
