Hubby Bear (eater): Tuna steaks often end up a little dry, but this recipe keeps them really moist! It really is the best way to prepare tuna. Served with some starches to sop up the coconut liquid is wonderful!

Ingredients:
2 large sweet onions (Maui or Vidalia) – sliced very thin
1 tbsp fresh ginger – slivered
¼ tsp white pepper

- Assess the broth consistency and add water gradually to reach your preferred level.
- Season with salt to taste.
- The broth should be medium-bodied to lightly brothy.

Ingredients:
5 scallions – thinly sliced
Optional: fresh hot pepper, sliced
Tasks:
- Stir most of the sliced scallions into the pot gently to avoid breaking the fish.
- Reserve some scallions for garnish.
